Yummy Butternut Squash Risotto
It is really too bad that a picture cannot convey the taste of food. This risotto was delicious!
I love risotto. Growing up my mother made 'risi e bisi' often. It is a northern Italian dish of rice and peas and was one of my favorite foods at home. But since my youth, I have tried many different risottos and have never been disappointed in any varieties.
This particular recipe is from the Barefoot Contessa. It is saffron risotto with butternut squash. I did not follow the recipe exactly since I wanted to use up some bacon I already had versus buying some pancetta. And I finely diced an onion instead of buying a shallot. It still turned out wonderful and even the leftovers were good the next day.
This was a perfect light supper for fall.

That looks and sounds delicious, Denise! As strange as it sounds, the best risotto I've ever had was in Mexico. I have high hopes for my Italian trip next spring.
