My Sunday dinner is in the oven and the aromas are making my mouth water and my head spin.
I do not eat a lot of beef. It is just not one of my favorite foods. But yesterday I was in the grocery store and saw some very nice cuts of chuck roast on sale. I thought that perhaps I would make an old-fashioned beef stew, using up the carrots and potatoes I already had on hand, along with an opened bottle of red wine leftover from another recipe.
Rather than just 'wing-it', I decided to use a recipe from the Barefoot Contessa for Parker's Stew. The only change I plan to make is to add some button mushrooms that have been sauteed in butter near the end of the cooking time.
While I usually make Beef Burgundy when I buy this cut of meat, I cannot remember the last time I made a beef stew. When my children were young and at home, I would make it, but it was not a favorite of theirs.
When I went back to college to work on my MBA, my youngest was in nursery school. I would sometimes drop him at an in-home day care near his school and the woman there would then drop him off at school after lunch.
One day he told me that his lunch was really great. I asked him what he had and he said it was stew. I reminded him that he never ate it at home and he told me that I did not know how to make it.
Dissed by a four-year old. Frankly, that may have been my last attempt at stew, lol.
If I remember, I'll take a pic when it is done and post it with this. If I am not too busy eating.

Dinner. I made corn muffins from the latest issue of Cook's Illustrated. Very good, too.

Funnily enough I have never been a big fan of stews either. I do make them now and again as hubby likes them. Have you ever tried a Daube Provençal? Used to be one of my favourites. You certainly cleared your plate.
