A Thanksgiving Menu

As I have been doing for many holidays, I am again posting my menu for Thursday Dinner:


Spinach & Artichokes in Puff Pastry

Pear and Gorgonzola on Mixed Baby Greens
w Pear-Balsamic Vinaigrette

Roasted Turkey w Giblet Gravy
Chestnut Dressing
Sweet Potato Casserole
Mashed Buttermilk Potatoes
Green Beans in Café de Paris Butter
Brandied Cranberry Chutney
Rolls and Orange Butter

Pumpkin Mousse Trifle

I think I have it all together.  Big item is to deconstruct my turkey and then brine the breast, salt the legs, and de-bone the thighs.  I am doing my own version of Julia Child's deconstructed turkey which I have made in the past.  I also need to make my turkey stock and cook those giblets for the stuffing.  I need to skedaddle.

    1. I learned from my family on both sides who made unbelievable family meals for 20 or more people. I don't make nearly the number of dishes I used to make. Age takes its toll.

    2. I guess we never made that many dishes in the UK. 3 courses or possibly four, but not loads of side dishes like y'all make over here.

    1. You sound like my children. I always have to put out my menu before hand so they can ponder the day in terms of food and football.

    1. Looks to be about ten of us this year. Nothing like dinners when I was a child and 25 or more would fill up the house.

  4. We (my husband, whose hobby is cooking) used to do stuff like deconstructing a turkey. One year he was even thinking of hand-making a turducken. No more. Still, today husband is making a turkey with homemade stuffing (from store bought bread), fresh veggies. I made an apple crisp, a pumpkin pie (store made pie shell) and cranberry sauce.     1. Pillsbury pie shells are my favorite time saver. Bought Pepperidge Farm bread cubes too. Nuf' to do without spending time on those items. Hope you had a good day.

  5. This all sounds delicious! Once for a Gourmet Club dinner I boned and stuffed a small turkey. It really looked pretty and tasted pretty good too. This year my daughter's new beau brined and cooked a 14 pounder in the gas grill. Fabulous.

    1. I've always wanted to do my turkey on the grill, but I can never rely on the weather here. Of course, I could do one in the summer, lol.
